This is one of the easiest recipes I've done in a while, and it was absolutely delicious. I made a gluten free version, since the original calls for bread crumbs. I'll show you my secret below. All you need are the following ingredient: 1/4 onion, 1/4 cup parmesan cheese, 1 egg, 1 cup shaved zucchini, salt & pepper (and bread crumbs - not included because I made my own as you'll see below). The first thing you want to do is preheat the oven to 400 degrees. Then, grate the zucchini and squeeze it in a dish towel so that all the water comes out. Next, dice 1/4 of a yellow onion into tiny pieces - you don't want to be bitting into big chunks of onions in your zucchini bites!
Next, you want to combine all the ingredients in a mixing bowl: one whisked egg, grated zucchini, parmesan cheese, salt and pepper, diced onion (and bread crumbs - shown below) into a bowl.
To make my own bread crumbs, I just toasted some gluten free bread until it was extra crispy, threw the pieces into a food processor, and voila! Super easy.
Next, make sure you spray the pan with a non-stick spray, and then scoop the mixture in the bowl into a muffin tin and stick it in the oven for about 18 minutes (I left them in longer to make them extra crispy).
Scoop out the muffins with a spoon after they cool for a bit.
