Butternut Squash Risotto // The Casual Classic

Sweet Potato Risotto

I'm not gonna lie, it's hard to make a creamy, delicious, healthy risotto. This receipe though, defies the odds. Every single ingredient in this is beneficial for your health, plus it's super delicious. The ultimate comfort food. It is also the perfect thing to make on a Sunday night as you'll have leftovers for days to come. The spices combined with the butternut squash are just heavenly. Read on for recipe and directions!

Ingredients:

  • 2 large sweet potatoes
  • 1 cup brown basmati rice
  • 1 tbsp paprika powder
  • 1 tbsp rosemary
  • 1 tsp cinnamon
  • 1 tbsp olive oil (or coconut oil)
  • 3 tbsp apple cider vinegar
  • 1 tbsp nutritional yeast
  • 1/2 avocado
  • 1 lime
  • 2 tbsp coconut milk (full fat - from a can)
  • handful of cilantro
  • salt and pepper to taste

Directions:

  1. Preheat the oven to 400 degrees F. While that is heating, cook the rice according to the package.
  2. Peel the sweet potatoes and cut them into small cubes and place them on a baking tray. Sprinkle them with the olive oil, paprika, rosemary and cinnamon. You can also substitute coconut oil for the olive oil (melt it first though). I think the sweet potatoes taste even better with the coconut oil, but they are a little mushier. Roast the potatoes for about 25-30 minutes or until they are soft.
  3. After they are cooked, put about two handfuls of the sweet potatoes aside and the rest of them in a food processor or blender (I used a blender). Add the avocado, coconut milk, apple cider vinegar, nutritional yeast, salt and pepper, and juice of the lime and blend until creamy.
  4. Put the cooked rice into a large bowl and combine it with the creamy sweet potato mash. Next add in the chunks of sweet potato you set aside.
  5. Top with fresh cilantro and enjoy!

Peanut Butter Dark Chocolate Chip Cookies

Peanut butter and chocolate. Two of my favorite things. Two of my favorite things in a decently healthy, dairy free, gluten free, refined sugar free cookie!? Yes please. I've been experimenting a lot with the homemade healthy baked goods recently, and have yet to make a recipe that hasn't been absolutely delicious! You could practically eat these for breakfast (although not sure I'd recommend that), but at least they are that guilt free, right!?

Ingredients:

  • 1 cup rolled oats or oat flour (I made oat flour in my food processor - directions below)
  • 1/2 cup peanut butter (preferably creamy)
  • 2 tbsp melted coconut oil
  • 1/4 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt (I used Himalayan)
  • 1/3 cup dark chocolate chips or chunks
  • Optional: 1/4 cup coconut flakes

Directions:

  1. Preheat oven to 350 degrees, and line baking sheet with parchment paper.
  2. In a food processor or blender, add the oat flour*, peanut butter, coconut oil, coconut sugar, vanilla extract, almond milk, baking soda, and sea salt.
    • * To make the oat flour, add the rolled oats to the food processor alone, and pulse for about 1-2 minutes until the oats resemble a fine flour.
  3. Mix/blend everything together until it resembles a creamy cookie dough.
  4. Pour dough into a bowl and add chocolate chips (and coconut flakes if you decided to add those).
  5. Spoon cookie dough onto baking sheet (about a tablespoon amount), and flatten each one slightly with a fork.
  6. Bake for about 10-12 minutes or until the cookies are slightly browned and no longer sticky.
  7. Enjoy!!!

Two very exciting things are happening today that I want to tell you guys about... 

#1. It's my birthday!!! The big 27... Not really a big one, but still exciting either way. I love birthdays, and I'm even more excited for this weekend's birthday plans. We're heading up to Lake George for a little getaway! Some rest, relaxation, maybe some skiing, and some spa time.

#2. The Anine Bing sale started yesterday. Now that's also something to twirl about. If you don't know Anine Bing, she is a model/blogger turned fashion designer and she makes the BEST shit. No joke. I want pretty much every single thing listed on her site (if only my wallet would allow me). Very rarely, she has a big sale, and one is going on now!
