So proud of my friend @foodbymars for creating this incredible mixture of toppings for @kokus_nyc! You're truly talented girlfriend.
Now I'm on a mission to recreate this incredible 8 ingredient organic soft serve at home. Wish me luck... 😜

When you bring your leftovers to work and make a BOMB ASS salad. Also when your bomb ass salad gets a comment from a coworker regarding the so-called "massive amount of food" that it is. Ok hater... you just wish your lunch looked like mine 🙅🏼

Take just 10 minutes out of your day to stretch and move that bod of yours. When you sit at a desk all day, there is nothing better to help your flexibility, alignment, and overall wellness.

My new favorite snack: avocado egg salad with spinach. It's hearty, filling, full of good fats, and omg does it taste amazing. It's also great on toast, which I'm sure you'll be seeing tomorrow AM for my breakfast. Recipe below (FYI: these measurements are just estimates - they don't need to be perfect and you can adjust however you'd like).
➖6-8 eggs, hard boiled
➖1 whole avocado
➖juice from 1/2-1 lemon
➖2 heaping tbsp paleo or vegan mayo
➖1 healing tbsp Dijon mustard
➖salt and pepper to taste
➖handful of chopped spinach
Chop the eggs up or mash with a potato masher and put into a large bowl. Mash the avocado in a separate bowl and add the lemon juice to the avocado. Mix the avocado mixture into the bowl of eggs. Add the mayo, mustard, seasoning and spinach, and mix well.

Tried to do some yoga and failed miserably when Mosley assumed me on the floor meant play time. So yoga time turned into snuggle time. Neediest little pup - good thing he's cute.

Well I guess it's national chocolate chip cookie day today (my favorite food, obvi), and I totally dropped the ball. So to make up for it, I'm sharing the recipe for the MOST amazing paleo chocolate chip cookies I've ever tasted on the blog on Monday. Yes, I'm serious, and yes, they taste better than the original. I promise it'll be worth the wait.

Morning errands aren't complete without my green juice and Mosley in tow.
