October is finally here, meaning it's time for pumpkin recipes (unless you're like me, and eat pumpkin flavored things all year round). I've picked a few of my favorites that I'm dying to try below. Homemade pumpkin spice lattes? Yes please!

Cream Cheese Filled Pumpkin Bread

1 large egg
1 cup pumpkin puree
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1/4 cup liquid-state coconut oil (canola or vegetable may be substituted)
1/4 cup cup sour cream (lite is okay; or Greek yogurt may be substituted)
2 teaspoons vanilla extract
2 teaspoons cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon ground nutmeg
1 cup all-purpose flour
1/2  teaspoon baking powder
1/2  teaspoon baking soda
pinch salt, optional and to taste

Cream Cheese Filling
1 large egg
4 ounces softened brick-style cream cheese (lite is okay)
1/4 cup granulated sugar
3 tablespoons all-purpose flour

Cinnamon Sugar Pumpkin Pretzels

1 1/2 cups very warm water
1 tablespoon active dry yeast
2 tablespoons honey
4 cups flour
1/2 cup canned pumpkin puree
1 teaspoon salt
1/2 teaspoon pumpkin pie spice

The Boil
1/3 cup baking soda

1/4 cup (4 tablespoons) butter, melted
1/4 cup cinnamon + 2 tablespoons sugar

3 cups powdered sugar
1/4 teaspoon vanilla
2 tablespoons cream cheese, softened
2-3 tablespoons of milk

Homemade Pumpkin Spice Latte

Latte Recipe
1/2 teaspoon pumpkin pie spice (visit here to make your own spice)
2 tablespoons pumpkin puree
2 tablespoons honey
1 1/2 cups milk
2 tablespoons pure vanilla abstract
2 shots espresso (or 2/3 cup strong coffee)
whipped cream for serving

No Bake Mini Pumpkin Cheesecakes

1 sleeve graham crackers
1/2 stick (4 tablespoons) butter, melted
2 tablespoons sugar
2 tablespoons brown sugar

1 8-ounce package cream cheese, softened
1 15-ounce can pumpkin puree
3 teaspoons pumpkin pie spice
1 1-ounce package sugar free cheesecake-flavored instant pudding mix (or 1/3 non-sugar free instant pudding mix)
1 14-ounce can sweetened condensed milk
1 12-ounce container frozen whipped topping

Pumpkin Cream Cheese Truffles

Truffle Recipe
1/2 cup white chocolate chips
2 cups white chocolate chips (or almond bark)
1 1/2 cup gingersnap cookie crumbs
1/4 cup canned pumpkin puree
1/4 cup graham cracker crumbs
2 tablespoon confectioners sugar
1/4 teaspoon ground cinnamon
